Abstract : ไข่ เป็นอาหารของคนทั้งโลก มีส่วนประกอบหลักๆ คือ เปลือกไข่ อาจมีสีน้ำตาลหรือสีขาวขึ้นอยู่กับชนิดของพันธุ์ แม่ไก่ สีไข่ไม่มีผลใดๆ ต่อคุณค่าทางโภชนาการ ในเปลือกไข่จะมีคอลลาเจล ทำให้เปลือกแข็ง ทำให้เปลือกแข็ง เปลือกไข่จะมีรูขนาดเล็กมากมองด้วยตาเปล่าไม่เห็น อากาศและความชื้นสามารถแทรกผ่านรูเล็กๆ ที่อยู่ในไข่ได้ เมื่อไข่ออกมาใหม่ๆ จะมีเมือกเคลือบที่เปลือกไข่ด้านบนเพื่อป้องกันไม่ให้อากาศและน้ำผ่านเข้าไปได้ เมื่อเก็บไว้นานๆ เมือกเหล่านี้จะแห้งไปทำให้ไข่เสียเร็ว เยื่อหุ้มไข่มีอยู่ด้วยกัน 2 ชั้น ชั้นนอกที่ติดเปลือกและชั้นในที่ติดกับไข่ขาว ในไข่ขาวประกอบด้วยน้ำและโปรตีน มีไขมันเล็กน้อย ไข่แดงจะอยู่กลางฟองโดยการยึดของเยื่อที่เป็นเกลียวแข็ง ไข่แดงมีความเข้มข้นมากกว่าไข่ขาว เพราะมีน้ำน้อยกว่ามีไขมันและโปรตีนมากกว่า บางฟองอาจมีจุดเลือด มีสาเหตุมาจากเส้นเลือดฝอยในรังไข่ของแม่ไก่แตก ไม่มีโทษแต่อย่างใด ไข่ มีคุณค่าทางอาหารสูง ในไข่แดงมีคาโรทีนอยด์ ช่วยลดภาวะกล้ามเนื้อเสื่อมและปัญหาสายตาในผู้สูงอายุ โคลีน ช่วยลดคอเลสเตอรอล เสริมความจำและการเรียนรู้ กรดโฟลิก วิตามินบี 6 บี 12 ช่วยกำจัดสารโฮโมซิสทีน ซึ่งถ้ามีมากจะเพิ่มความเสี่ยงของโรคหัวใจและภาวะหัวใจล้มเหลว สังกะสี ช่วยสร้างเอ็นไซม์ซัลเฟอร์ ช่วยลดการอักเสบและขจัดสารพิษออกจากร่างกาย แมกนีเซียม ช่วยแก้อาการไมเกรน และแคลเซียม วิตามินเอ ดี อี เค บีรวม เหล็ก ไนอะซิน โพแทสเซียม โซเดียม และกรดไขมันที่จำเป็นต่อร่างกาย

English Title : Postharvest and postmilling changes in wheat grain and flour quality characteristics

Abstract : Background and objectives Soft red winter (SRW) wheat grain immediately after harvest and flour after milling were stored for 26 weeks and analyzed for comprehensive milling and baking quality characteristics at different time points to examine the consistency of the quality test results. Findings Increases in falling number (FN) of grain during postharvest storage were observed for nine of ten varieties, in which FN ranged from 62 to 264 at 2 weeks after harvest and increased by 18–109 during storage for 21 weeks at 23°C. Wheat grain exhibited evident fluctuations in refined flour characteristics during the first 4 weeks of storage and then lesser changes with further storage. The storage time of grain did not significantly influence the milling yield, FN, and water SRC of refined flour. For refined flour during postmilling storage, storage time significantly affected all the flour characteristics, which showed evident fluctuations especially in the first 4 weeks of storage. The refined flour FNs of all four tested varieties increased from 373–405 to 377–417 during the first 8 weeks and then sharply to 427–474 with further storage for 26 weeks. Flour pH decreased slightly for the first 2 weeks after milling, was stable for the next 8 weeks, and then decreased again to 5.74–5.90 at 26 weeks. Small but steady decreases in both lactic acid SRC and SDS sedimentation volume were also observed for refined flour during storage. Postmilling storage induced relatively small changes in the solvent retention capacity and cookie diameter of flour. Conclusions Postharvest and postmilling changes must be considered to achieve a reliable determination of the FN of wheat grain and flour, and pH, SDS sedimentation volume, and lactic SRC of flour. A storage time of 4 weeks would reduce the variation in wheat grain and flour quality test results, allowing reliable and reproducible evaluation. Significance and novelty The FN of both wheat grain and flour significantly increases during postharvest and postmilling storages. The pH and protein strength of flour show small decreases during postmilling storage with even smaller changes in water retaining capacity and cookie‐baking quality.

English Title : Impact of drying deep beds of rice with microwave set at 915 MHz frequency on rice microbial community responses

Abstract : Background and objectives The impacts of microwaves set at the 915 MHz frequency and power levels 5, 10, and 15 kW on inactivation of harmful microbes across rice beds of different thicknesses 5, 10, and 15 cm, during microwave (MW) heating for 4, 6, and 8 min, were examined. Findings Increasing MW‐specific energy from zero (control) to 900 kJ/kg‐grain resulted in statistically significant decreases in rice microbial loads. At the highest specific energy, the reduction in the aerobic bacterial and aflatoxigenic fungal loads of Aspergillus flavus was 4.56 and 2.93 log colony‐forming units, respectively; virtually no statistically significant disparity of the A. flavus mold count was observed across the entire rice bed of up to 15 cm thickness. Conclusions Depending on selected MW‐specific energy, treatment of rice with MW set at the 915 MHz frequency has potential to achieve significant reductions in the harmful, A. flavus mold that inhabit rice; this has potential to reduce risks of rice contamination with aflatoxin. Significance and novelty Simultaneous drying and decontamination of harmful microbes, such as A. flavus, as accorded by the treatments using MW set at 915 MHz frequency, could improve overall rice drying efficiency with the merits of securing rice quality and safety, thereby improving returns to producers and processors.

English Title : Preparation of Maillard reaction flavor additive from germinated wheat and its effect on bread quality

Abstract : Background and objectives Germinated wheat was used as the raw material to make a new type of natural bread flavor additive to enhance the taste of ordinary bread. This study aimed to achieve a better optimization of Maillard reaction products and explore the effect of the Maillard reaction products on bread flavor. Findings Through an orthogonal experiment, the sensory evaluation score by the Friedman rank test was used as an indicator to determine the best technological parameters for making the Maillard reaction flavor additive from germinated wheat: A 1:2 ratio of 2‐day‐old/3‐day‐old germinated wheat flour, a 130°C baking temperature, and 15 min baking time were found to be optimal. Then, the effect of the Maillard reaction products on bread quality was studied. The results revealed that the optimum addition of the Maillard reaction product was 3%, which could produce bread with more baking flavor and best sensory assessment without affecting the bread specific volume, texture, and color. Conclusions Germinated wheat can be used to make flavor components with bread‐like baking smell by the Maillard reaction. These flavor components, made by mixing wheat seeds at different germination stages at a certain ratio and produced by solid‐phase baking, can give relatively favorable flavor to bread. Significance and novelty This approach not only can solve the problem of improving the flavor of bread, but is also in line with the current pursuit of natural health food, and additionally can provide a new way for the comprehensive utilization of germinated wheat.
